I'm about to begin the pot change but look at this...

I've uploaded a few shots of my control cavity. You will notice that one of the pots sits in a depression. For some reason the company routed out the hole for that pot a little deeper. Why? Seems very strange. So I'm looking at this and then looking at my CTS pot assembly and realize I won't be able to install the metal grounding plate that comes with the new pots. It won't sit flush in the body with that depressed hole in there.

So one question is if I just say the hell with the metal grounding plate and simply install the pots alone can do I need to install some kind of grounding wire to make up for the fact that I'm not using the grounding plate?

I hope my photos gives you guys some info to help me out.

I don't see the problem, just add the extra washer between the body and the plate and you are good to go.

It's a carved-top guitar, yes? Could be that the one pot needed to sit a little deeper to accommodate a thicker top where it's positioned. I agree an extra washer should work, assuming the threads on the pot are long enough where they come out the other side. If not, just do without the plate and you can run a bare ground wire across the four pots.

Is that black paint carbon-conductive ? If it is, you'll be good without the plate anyway. Find out by using a multimeter.

I'd bet that it's shielding paint. I don't currently own an Epiphone but most Asian imports that I have run across have it and I think that every one that I currently own does, except for one.

In case you cant or don't use the plate, here is a photo of the cavity of my LP. I used buss wire (I think it's 16 gauge) to tie/ground the pot cases together. The pot on the top left (neck volume pot) is where the Gibson ground wire is soldered along with the buss wire. You can use any wire you have available, I prefer solid core. It's neat and easy to work with. If you want to use a piece of solid core wire but don't have buss wire, stripping the insulation off of a section of regular solid core wire will accomplish the same thing.
