I had never tried soldering in my life and now I do it all the time. It is pretty easy to do. Try starting with a pencil soldering gun aroung 25 to 30 watts. I use a 45 and 25, but be careful with anything over 25 untill you get used to it. If you are replacing stock pup that you are not to concerned about try cutting the leads to where you have about a inch still connected to the pots and then twist them to your new pups leads. It is easier to do that then to solder to the pots right of the bat.
having a pup installed with cost you any where from $20 to $50 depending on your area.
if you know how to use a soldering iron, its not overly complicated if you are careful and take your time
