i've seen bands mic two cabs all the time on stage. i've done it in the studio with my marshall 1960, which has the 75's in it, and another V30 cabinet, and got decent results. you just have to be aware of any phase issues. or if you're recording onto the computer, you can always just place each mic wherever they sound best, and "cheat" by nudging one of the tracks over a bit to correct any phase problems if necessary.
