I don't think nickel pickups will look good on that. I'd buy whatever pickups you want and stick plastic covers over them.

It's an awesome looking guitar, you have a great wife!
Is it just me though, is the bridge pickup closer to the bridge than normal? It seems to be, and there seems to be a bigger gap between the pups as a result. Maybe that's exacerbating your issue with the strings catching in the pickup screws.

Not a fan of plastic covers like on active pickups. Also the string doesn't get caught on the screws, it gets caught on the lower part of the bobbin of the neck pickup. Like this:




Dimebag used to have the same issue and he would just put electric tape to cover that part up. Like so:
