How does a copper guard affect the pickup/magnetic field? I'm aware of DiMarzio baseplate effects (are those brass, I think?).

Not entirely sure. I think a copper plate on the bottom of a pickup (like a telecaster pickup) would have more of an effect. The copper pickguard does help the shielding and adds some sustain being that it is metal.

Wow, I love how unique they are! Does the copper oxidize quickly?

The oxidation/patina takes some time. The more you play it seems to make it happen faster. Body oils and sweat and all that. The Warmoth strat had some vinegar dabbed on it before I installed it. That helps it patina faster.

Does it turn darker...or green?

If I remember correctly, I added vinegar randomly on the face of the pckguard and the rest is time/age. And I only did this to the tobacco sunburst strat pickguard and the rest are naturally patina'ed

Science solves things again!
