My hollowbody have two P90 dog ear. I'd like to change it for humbuckers for a warm and smooth jazz sound. Does a Paf in a P90 dog ear cover exists ?

No. The closest you can get is am mini-humbucker, which was designed as a direct replacement for the P90.
Standard-size humbuckers are wider than P90's and won't fit under the cover.
And anyway I would think that P90's in a hollowbody would give you a really good jazz tone. Remember that probably most of the jazz records you hear from the 50's and early 60's (and many later) were done with archtops with P90's or P90-like single coils, because prior to 1957 there was no such thing as a humbucker. (Yes, I know Seth Lover came up with it in 1955 but it didn't appear on Gibsons 'til 57.)

How do you fit a full-size humbucker under a P90 cover? If I understand him correctly, he's not looking for a stack to cancel hum, he's looking for humbucker tone.

Dimarzio has some humbuckers in soapbar format, I'm pretty sure they should have in dog ear format

I think Yamaha uses those DiMarzio's in their Gretsch-looking guitar with the Bigsby. Supposedly they sound nice and can be split, if I'm thinking of the same thing.

I've found this on Musician's Friend. Maybe you should look into this:

It's a Duncan Stacked P-90. I think that's what you're looking for. DiMarzio also makes Stacked P-90s. If you're looking for P-90 tone in a humbucker size, however, the Phat Cat is what you're looking for. Gibson also makes a humbucker sized P-90 pickup. If none of this is what you're looking for, maybe a mini-humbucker is for you. Seymour makes a few of these in his regular line and he makes the Firebird Mini-humbuckers and the Antiquity II Mini-Humbuckers like in the old Epiphone guitars and on the Les Paul Deluxe. Gibson also makes this pickup, if you don't care much for the "aged" look of the Antiquity line.
