I've tried a couple of guitars with noiseless pickups and also didn't get on with them. They seemed a bit sterile and lacked some vintage mojo.
I have two strats, a 57 reissue with Fender 57/62 pickups and a 2012 Standard with the Fat 50s. They are both the stock pickups and sound great so have no need to change them. The 57/62s are low output but have a warm vintage tone, and the Fat 50s are an all around great all purpose pickup with a vintage vibe. For the artists you have suggested you may want to try the Fat 50s, as they are vintage enough for Frusciante style funk, but have a bit more output than true vintage which would help with those Gilmour lead tones. And yes if you are after a Frusciante tone you'll want a single coil in the bridge position. Hope this helps.
