I play mostly Ichika style Fingerstyle for cleans and Polyphia/Intervals type prog metal. For cleans I usually add a good amount of Reverb so I really want each note to stand out through chords while retaining a good bit of bass and clarity. I don't mind the stock pickups but I played a guitar at a shop with Seymours in it (not sure what type) and fell in love. They just had a sustain I had never heard before. I was looking at the mayhem set as well but i play through a Line6 Spider V which already has pretty heavy distortion and I dont wanna muddy it up. I’ve only also really looked at the JB/Jazz and Pegasus/Sentient Combos so If you think there’s a different combo for me please Lmk. I’ve been playing almost 10 years but I’m fairly new to pickups so any advice is appreciated! My IbanezS521 has a Maple neck and Mahogony body.

Pegasus/Sentient is a great option for prog/tech rock-metal. Great note clarity on bridge and neck pickups with that combo. Moreover, from your description, it sounds to me like this combination will work well for you!
