In a guitar where the pot screws into wood, its a bit more tricky. You can do what you just suggested, or fabricate a light metal shield. If you have a hobby store nearby, thin sheet metal is easy to find. Otherwise, it can be more difficult.
Testing a pot is easy. Measure across the two outside lugs, and you should measure the full value of the pot. Then measure from the center lug to both outside lugs - one at a time. Turn the shaft as you do. You'll see the resistance go up and down as you turn it. If it hits a certain spot and cuts out - you have a dirty or damaged pot.
