No, there is no escape. For a humbucking effect you must have either opposite magnetic polarity in the coils or no magnet(ic field) in one of them.
It works by out-of-phasing the noise electrically (the coil) and then out-of-phasing again via the magnet to get the signal you want back into phase.
So if you reverse the coil you get the hum back.
