There is a great band called Russian Circles from Chicago. They are fully instrumental, and use tapping in a more musical way. It doesn't sound like an exercise, and its not shredding. Check 'em out if you like it a bit left-field and avant garde.

Regarding tapping, it's just another skill a guitarist can have in is bag of tricks, like slides, bends, sweeps, tremolo picking, vibrato, et al. The goal of playing a guitar is to create music that moves someone. (That someone CAN be yourself, if you enjoy shredding at home, it can be an entire stadium full of people, it can be a record producer that signs a contract) The guitar is just a tool to coney emotion to someone else though music.
