When splitting a paralell wired humbucker....

...would it work if i just put an on\off switch on the hot wire of the coil i wanted to cancel, or should i use a two way switch that let me send the signal to ground instead of just killing it?

ive never split a parallel pup but i would recommend NOT sending it to ground

In a paralleled humbucker, both hots are connected together, and both grounds. Sending one to ground, sends both - killing the output.

You'ld want to "break" the connection of the undesired coil, as you first thought.
