Does the lack of a maple cap make a difference when it comes down to the tone of a les paul. Arnt studios all mahogany?

In this price range most if not all the maple "caps" are veneers anyway.

I know for sure the ML-2 has a maple veneer and the SE245 has a real maple cap. As for the EC-401 I'm not sure but I'd be tempted to say that it has.

Out of the ones I've played, if you ask me what a modern LP is I'd say it's a Jackson Dominion. I know it barely looks like a Lester, but to be honest a Saber is pretty far from a '54 Strat too and it's still considered a superstrat.

The basic recipe is there: Mahogany body, maple top, mahogany neck, 24.75" scale, '59 pickups (recently switched out for DiMarzio Dominions which are decidedly more modern but still not super high output).

The modern upgrades: oiled necks, chambered body, graphite reinforced necks, coil taps, an uglier but more ergonomic body (IMO), neck through, compound radius fretboard, and locking tuners in some models.

Edit: Also, if you're looking for a cheaper model, wait for the DX2 that was just announced. X series instead of Pro and maple neck instead of mahogany. Still comes with DiMarzio Dominions.

Out of the ones mentioned I'd choose a Michael Kelly as well. Like BloodRose I have a Patriot (Limited instead of Custom) and I find her to be a great guitar irrespective of price. Ticks all the right LP boxes as well:
24,75" scale, Mahogany neck and body, real (plain) maple cap with a figured maple veneer on top of it, actual ebony fingerboard. And after about three or so years of owning her the ONLY thing I changed was the bridge pickup and that not because it was bad but because I wanted sth hotter.

Oh, and do NOT overlook the Tokai series . . . there are some GREAT bang for buck LP=shaped guitars in their catalog.

Depends. Regular Studios have maple tops. The faded Studio series from a few years ago were all mahogany, then at one point they started making them with maple tops. To be honest, there's so many different Studio/lower end models out now that I've lost track of what has what.

And the lack of maple cap does make the sound slightly darker IMO. To some, it's barely noticeable, though.

I voted PRS, I had one and it was a quality guitar! BUT I think you could also pick up a used Gibson LP, a Studio, a Special SL, or what I just got....a Les Paul Special Junior Humbucker (yeah...real name):
