Wiring issues, higher ohm pots? and my introduction...

Ok heres my Newb post...

Im playing through a Peavy 212 Super Chorus (boo for solid state whatever)
I had a nicer tube amp but it broke the input jack, and then was smashed by a falling desk.. I cried.
Im playing a 4.5 year old left handed standard Squire strat.

Cheap as hell but it was between the classic look of the Squire or a crazy ass Ibanez.
Being left handed and 16 it was hard to find somthing for less then $500 that I could talk my mom into.. I was allready buying the car myself, and a guitar was pretty much the only other thing I wanted.
So years later I realize the thing is a J-spec piece of crap and have spent the last few months trying to make it halfway decent.
First off, Its heavyer then any strat I've played, Even the SRV's. It also came with a VERY nice finish (black metalic) that I havent seen very often.
Since I've gotten it:
New setup and specs from a local shop..(was 18, no Idea what exactly was done, mainly action and intunation)
Changed the tuners,
wet sanded smooth parts of the neck
Finished the Rosewood Fretboard (still dark and resilant)
new nut
and here recently my pots went bad.. ALL of them..(the 1/4 of dust inside probobly helped)
So I started off changing the pots out, and while I had it open I figured what the hell, Its either supe this one up a bit or save for a custom.
It was between Noisless, Texas Specials or a SD setup

I sat at Sam Ash for about 30 minutes wailing on a 70's lefty fender, pluged into a Line 6 head/cab combo just to get the feel for it.
and the SRV was nice, but not over the top in differences like I thought it would be.

I did alittle research and chose a Hot Rail/Vintage Rail/Duckbucker setup with standard wiring.

I couldnt find the Vintage rails here localy and after buying a new pedal for my amp I couldnt wait any longer, so I slapped it all together with a regular single coil in the middle.
I had to port out the slots because the SD units were larger then the factory ones, and I had to do the same for the Pots.
I then wired the guitar using the SAME SYSTEM as before, allthough my soddering wasnt as hot as factorys.

My old nobs wouldnt fit the new larger pots so I left them off.

I pluged it in without strings, WOOT!! no fire!!
I strung it up, tuned and and started playing basic riffs...
I definatly am happy with the purchase, the single coil in the middle sounds like a tin can. The hot rails are super warm, and cary a very thick tone, and the ducks are super clean...

Only problem is the pots barely change anything, I mean the volume works, but im at full note by 6.
and the tone nob is so sensitive id say its between 3-4 is the only differences.
Second, I talked with tech at SD about a issue with me not noticing the UPC code and having a difference between pickups (N and B) woops. but he spoke of converting the bottom pot to control the bridge pickup instead of the middle one?
any recomendations on how to do that? he was a little of on the issue.

awesome thanks.. any Idea about the pot range?

250k would be my pick (all pots Must match)
soldering tip
- keep a wet rag in a bowl with a little water in it rub tip on wet cloth. to keep the tip clean
on fresh cut and stripped wire's twist strands together put solder on on end
put solder on lug of pot that your wiring to
if you have an alligator clip clamp it on wire (absorbs heat so you dont burn up componet's)
put tip on lug as solder liquifies stick wire through it
then clean the tip again
