They will work fine electrically.

The problem I see is that if they are low quality they might cause a short, and that wouldn't be great for your output transformer. I would order one and inspect it carefully to judge whether you think it is solid.

You can also test it by using it for a signal and then twist and shake it real hard to see whether there is any reaction that you can hear.

It should be fine, the difference between speaker cables and instrument cables is in the cable, not the jacks. There should be plenty of metal conductor in that adapter to handle speaker level current, unless you are pushing 200+ watts or something, I might be a little hesitant to use it on a 1000W PA amp or something.

I'd just re-terminate with an angle plug if you can find one that fits the cable. Not that I don't think it would work, it's just something else that can be pulled out. Barring that, I agree that it should work fine.
