k. Pretty noob question, but how do i remove my old pots and knobs off my les paul?

Pretty simple really, first take off the knobs. sometimes they pull right off, sometimes ya have to use something like a flat-head screwdriver to pry em off. If you use something to pry them off be careful as to not damage the finish.
Next, make note of where the connections on the pot are. Un-solder the connections. After you're done with that, un-bolt the pot, pull it off.
To replace the pot, just bolt in the new one, and solder the wires to the same terminals as the old pot. Pop your knob back on, and there you have it.

I like using a shoestring to pull the knobs off the pot shaft. That way, you don't damage the finish.
