Is that because as time goes on grandpa can only hear more trebley frequencies with any clarity?
(I know this is actually the opposite of what happens with hearing loss with age)
Actually, I kinda understand what you are saying. As I play more I tend to use less gain and have ditched higher output pickups for slightly lower output pups. But to say that everyone, as their tastes refine, will gravitate towards singlecoils is a painting a picture with a broad, broad brush. Singlecoils just sound thin and too "ice-picky" to me. And until my hearing fails to recognize such high frequencies with any efficiency, I don't believe I would entertain the idea of buying a guitar equipped with them. And in that event, my refined tastes would not be the culpret, but rather my failing hearing that prompted me to deem the pickups tolerable for my tastes. Hell, my dad who is 55 and has been playing for years ditched his singlecoil bridge pickup in his strat for a lil '59 because the stocker was too thin sounding. And a lot of his idols use singles.
However, tastes do change and I might be surprised with my future decisions. But I like my guitars to be able to have some chunk, which I haven't been able to find in a singlecoil equipped guitar.
But its all subjective. Some people love them and some people hate them. And that is the case with any piece of musical gear. Its all subjective. Nothing wrong with liking anything. Some things just aren't for me.
The lifetime of a guitarist often consists of the gradual transition from humbuckers to single coils. You just don't realize it till you've been playing 20+ years. Your ear seeks purity more and more.
But that's not to say humbuckers can't be enjoyed for a lifetime too. However, over time, most people start wanting to hear purer sounding humbuckers with lower output and more dynamic range.
