There's a vid somewhere on YouTube where Ed talks about how they were a breakthrough, for him, saying something like if you've got a bogus guitar, it doesn't matter what frets are on it, pretty much says it all. I played a Parker once and my reaction was the same as yours.
Maybe 'never' is too strong a word, but certainly, it would take a very long time for any wear to show on them. Say you've got a couple of guitars that you rotate on a daily basis, it's doubtful that the one with ss frets will show any appreciable wear for yonks. You'd have to check out the discussion on Parker guitars that are approaching their third decade and see what people say.
Still, the pro's seem pretty significant; I'd definitely consider them when a full refret is due. I do a lot of bending and heavy vibrato, which wreaks havoc on nickel frets.
You know, I haven't even thought anything about them being stainless steel until I read your post. Apparantly they seem normal to me...lol

is it true that the SS frets will NEVER wear out? so once you set em in, you'll never have any buzzing frets again from them getting low.....
