Oh I also forgot to add that I will mainly be playing this guitar in Eb tuning w/ a drop C#

Ok after reading everything and looking at all the tone charts I think I am going to put a SH-5 (maybe w/ A8 mag) in the bridge and either a 59 or Pearly Gates in the neck (haven't decided yet lol).

Thanks everyone for all of your help and suggestions!

Re: Pickups for my Schecter C-1 classic...???

I just recently upgraded my c-1+ with a 59b in the neck and a Custom 5 in the bridge with triple shots. I was lucky to stumble upon a 59 bridge pickup with 4 conductor wire so I put it in the neck. I used to have a Jazz in the neck, which I really liked but I wanted something a little hotter. The 59 is just as bright as the Jazz imo, too bright for my guitar actually, I prefer a smoother neck pickup. I'm going to try an A4 mag in my 59.

As for the Custom 5, I think it is incredibly versatile and I play everything from single coil country to thrash/death metal. It sounds great with low tunings too. I'm going to try a C8 eventually and see how that goes. Ultimately, you just can't go wrong with a custom, one of the customs is bound to be your favorite. As for the 59, we'll see about the A4 mod, but you might be better off with something else like a PG or Jazz.
