I think just about every guitarist has something to offer from a learning perspective, even if it's, "Don't be like THAT guy!" LOL!
One of my favorite guitarists is Buzz Feiten. Check out his work on keyboardist Neil Larsen's albums "Jungle Fever", "High Gear", "Orbit" and the Larsen-Feiten Band.
George Benson is another one. You can go back to his early records, but I would start with "Breezin" and "Weekend In LA". And don't let your ears stop at the Benson solos--it's worth listening deep to hear rhythm guitarist Phil Upchurch's contributions.
Just saw an article about the guitar style of Mick Ralphs of Bad Company. A very under-rated guitarist in my opinion. The top of my under-rated list also includes Stephen Stills, Terry Kath of Chicago, Nile Rodgers of Chic, Roger Fisher of Heart, Davey Johnston with Elton John, and Robbie Robertson of The Band. Lindsey Buckingham of Fleetwood Mac is another one--I love his music, but his style of playing absolutely mystifies me--I have no idea how he does what he does. You typically don't hear these names mentioned with Clapton, Beck, Hendrix, Vaughan and Santana, but they are all great players.
There's some acoustic guys that should be mentioned, too. Jim Croce's guitarist Maury Mulheisen; and Gordon Lightfoot guitarists Red Shea and Terry Clements. Masterful, tasteful players--no, not the "STAR", but they knew how make "THE STAR" sound great and to play to make the music come alive.
And of course, most of the rock guitarists of the '60s and '70s learned from the old blues records of people like Muddy Waters, BB King, Albert King, Freddie King, Son House, Fred McDowell, Broonzy, Robert Johnson, Lightnin' Hopkins, et. al.
