I think one of the reasons that people don't talk about them as much is because guitar players, and audio buffs all KNOW speakers make a difference so they just don't mention it. In reality that should probably be one of the first questions asked.
Some of the largest rig tuning moves I've made have been with speakers. For example when I felt like the high end was too brittle and the low end to boomy in my 4x12 I had the G1280s reconed as big magnet 65s...2 with 75 and two with 55 hz cones. This gave me a LOT more mid texture and increased the low mids significantly. The last speaker swapping I did was to pull a Eminence Wizard and to install a Private Jack. HUGE HUGE difference. It fixed all the sonic qualities I didn't love in the new amp I had traded for. The scooped harder edged tone was replaced by and more even softer sound that sounded FANTASTIC on leads. In fact I gigged with that rig for the first time the other night and got all kinds of compliments on my tone.
