Those are cool guitars. Actually, it was just 'The Paul', right? There was actually a model called 'The Les Paul' that was the most fancy LP that Gibson made at the time ('78?). I know Steve Howe used one. As far as a pickup for the walnut one, I'd probably wait to hear it first to see if there is anything you need to 'correct' with it.
Oh, and here is a rather affordable Reverb listing for 'The Les Paul'.

Sometimes the factory T-tops can actually sound great in an all-walnut The Paul. Some might want more output than that, of course. But the ones I've played (used to be in a band with a guy who used one) didn't lack for tone. Sounded pretty massive in fact. If and when you land one, at least give it a try. It might surprise you.

Not exactly the same, but I have a Taylor W14ce Ltd with flamed walnut back and sides with a Sitka top. It's a fantastic sounding guitar. The way Frank described the midrange does the sound more justice than I ever could. It has great low end and projection, but the midrange is very unique and the top end sparkles. This guitar was one of the Fall LTD's from 2011 and I just love it.
