Whoever told you that is wrong. Too high a voltage will fry a component. There is no limit on current though. A pedal will only draw the current it needs to operate the pedal. It has no choice over voltage draw though. If you use, say, a 13V adapter, the adapter will try to provide 13V to the pedal, and that will fry something.
