For me its probably Eric playing live on some bootlegs. I saw a bootleg film clip of him playing an extended improvised solo on White Room during his Journeyman era, in about 89 or so, that is just absolutely devastating. How many have heard his solo on the 1st Crossroads DVD during I Shot the Sherrif? Wow! it just builds so perefectly and its not canned at all. So natural. I also like some of his live slow 12 bar blues soloing back during the 70's. His Worried Life Blues and When Girl Reaches 18 solos on the live at Budakon album is just dripping with feeling. You can feel the gravity of the subject matter in your bones and in your soul from just the guitar notes.
There's a Jimi extended solo on a live version of Stone Free recorded at the Albert Hall in 1969 that is just a tour de force of guitar playing. Unparalled virtuosity.
Everybody really needs to listen to the solos by Dicky Betts and Duane Allman on the live Filmore recordings. That is a clinic in building solos and trading licks.
I also still have a bootleg recording of Dire St. taken from the King Biscut Flower Hour in about 85 that features some mighty tasty soloing.
In sum it up, I guess live improvized solos just have more life and soul to me than most canned studio recordings.

So many great ones. One of my all time favorites is EVH on "Push Comes to Shove" while not particularly difficult (for Eddie), it's just perfect sounding to me. Another one I love is Vai on DLR's "Big Trouble. And while I'm at it, check out Steve Stevens on Billy Idol's "Man for All Seasons"

Understand that I am in no way apologizing for my acknowledgement of my love of the aforementioned and posted solos. They stand as a pair of solos that I have always enjoyed and will continue to enjoy. However, they are not the solos that impacted my gonadinal tissue when I heard them. In light of this gross discrepancy and the intended desire of the original poster, I submit the following selections which are more in line with this thread's intent and my true feelings regarding highly impactful solos, as opposed to those which I simply find highly enjoyable.

I'm pretty sure it's Gilmour.
I'll add on the acid trip section of "Over the Electric Grapevine" by Primus. While Les Claypool does rock aforementioned gonadinal tissue, Larry LaLonde is a major part of their sound. That stuff he does on songs like "Grapevine" continually blow my mind. He's the best avant-garde guitarist out there I says.

Crazy Train off the Tribute album made me pick up the guitar and want to play. I'm suprised Eruption hasn't been mentions

A killer, Gilmouresque solo by the amazing, criminally underrated Mick Box. Just amazing. LISTEN TO IT!! It starts around 1:45 in the clip if you're in a hurry.

Many Rory Gallagher tracks, countless Gary Moore solos, Peter Green, Steve Stevens, and yes Bullet Boys "Smooth Up In Ya" has such a strong groove thang going on, that though the solo, technically isn't that great, the 'feel' of it is killer.
Dave Gilmour has been known to have a memorable solo or two.
I like Rick Derringer's solo on the single cut of "Free Ride", different than the LP version (Montrose).
Jimi Hendrix, many of his songs, set up the solo magnificently..

this will probably get me shot, but i prefer some of vai's stuff with dave to van halen, and vai's solo stuff...
the guy who played on 'big train' has some mad chops too.
tornado of souls, hotel california and my sharona (seriously underrated IMHO) are all right up there
kurt cobain's solo in 'in bloom' has always been a favorite of mine for the loose out-of-control vibe... especially considering the guy was a relatively crap guitarist
i don't really like 'a new level', but dimebag's lead break in that is awesome; there are so many of his, marty freidman's and dave mustaine's solos that are awe-inspiring
