Check out the Australian acoustic band Coolangubra, violin, steel string acoustic guitar, and percussion. They play a mix of many styles. The guitar player, Steve Berry, was flatpicking champion of Australia a couple of times I think. They've got a few CDs out, and here's a YouTube clip:

Another interesting acoustic experimental group is the Penguin Cafe Orchestra from Britain. Slightly "academic" perhaps. Here's a clip of them:

Here's also a clip of Norwegian guitarist Terje Rypdal in a trio. Pretty experimental jazzy stuff:
