As usual, it's how the thing is crafted that matters a billion times more than what it's made of.
Often, a good guitar tech can "perfect" a stock nut. Other times, the stock nut has too much material missing, and can't be spiffed up to be good. That's when a replacement is necessary.
I don't replace until I have examined whether the stock one can be spruced up first.
I don't notice a damned difference with different nut materials – only a difference in quality of how they are shaped and slotted.
