There are actually a few different avenues to explore.
In the true strat single coil realm Alnico 2 pro. Try the flat polepiece version it has a slightly fatter sound. I was never a strat single fan till I got these pups.
Quarter Pound---it is like a P90 meets a Strat pup and they have a ugly little kid. It has less highs than regular singles and has more bass and low mids. I find mine in my tele are great for blues and blues rock.
A duckbucker will sound similiar to a single coil, but there is no exact substitute for a strat single.
