Is there a reason the ground from the switch isn't going anywhere?

well spotted! No, that has to be an error. Just ground that switch, unless you wanna hear a little buzz every time you flick it.

The wiring diagrams don't always show everything. Many times a ground is left off. I'm not sure it's because they feel too many lines on a diagram just muck it up or they just missed it.

Bottom line: when wiring from a diagram, you also need to use some common sense. Don't assume that everything is there and is perfect. I always make sure that everything is grounded whether the diagram shows it or not.
